  • 3 tbsp of sea salt
  • 4 tbsp of freshly ground black pepper
  • 1/2 tbsp dry thyme

Rub the rib roast with a little bit of olive oil. In a small bowl, mix the sea salt, black pepper and thyme. Sprinkle this mixture over the top of the prime roast. Wrap the roast in plastic wrap and refrigerate overnight.

Heat your grill up to 500 degrees. Grill the top and the bottom of the roast for 3 minutes on each side. Remove the roast from the the grill and wrap in aluminum foil. Bring the temperature down to 325 degrees. Place the roast in a roasting pan and add beef broth to the bottom of the roasting pan. If you would like, you can add onion, carrots, mushrooms, and garlic to the broth. Roast the prime ribs until they have reached the correct temperature.
